Cranberry Oat Bran Muffins

Well hello!

Since the last time I have posted a lot of things have changed. For one, I no longer have a job and secondly I am now on a health kick/clean eating lifestyle.

Since Im getting married in June (eek!) I decided to get serious about shedding some weight and finally becoming the me who I miss oh so dearly! This doesn’t mean Im going on another “fad diet”, it just means that I am now eating healthy and exercising. I do have the help of a good friend who happens to be a fantastic dietician..which helps a lot!

It has been a month since I started and I have lost almost 11 pounds (5 kilos) so far and Im so excited about this! I have decided to share my recipes with you, which will include nutrition information (calories, fat, protein etc)

Im sharing my oat bran cranberry muffins with you today! They are dairy free and I’ve used honey to sweeten them. I hope you enjoy this recipe.

Xtapodi Me Kofto Makaronaki (Pasta in Octopus Sauce)

Ok I know this recipe may not appeal to the majority of my readers, but if you are willing to be a little daring then this dish will blow your socks off!

I love Octopus. I think it comes with the nature of being Greek. I like it raw, grilled, boiled, anything. I especially love it in a hearty pasta sauce with plenty of wine and spices. Don’t knock it til ya try it.

George is always asking me to make traditional Greek dishes. This is one that completely slipped my mind until I opened my freezer and saw that beautiful half octopus just sitting in the corner all by its lonesome self. It clicked..I had to make it. So I did.

The pasta is not fishy at all. The octopus just has a really great texture and adds a ton of flavor. Make sure you garnish with plenty of grated cheese!!

Mushroom, Broccoli & Cheese Quiche

It’s not just broccoli and cheese. And its not just one cheese. There’s bacon, onion, gouda, roquefort cheese and the list goes!

The weather is finally starting to look and feel like fall here in Greece. This is the perfect fall meal.  It’s filling, cheesy and so yummy with a little side salad. You can use a pre-made pie crust or you can make your own. For this quiche I chose to make my own pie crust which I have included the recipe below.

Eggplant Bake

Well hello again.

Whole Wheat Pancakes

What’s better than a Sunday breakfast with pancakes, bacon, hash-browns, and sausage?! A breakfast with whole wheat pancakes that are only 85 calories a pop! {duh}

I love pancakes, but always feel so guilty starting my day with eating bad carbs and refined sugar. I was determined to make whole wheat pancakes, so I did it. These are fluffy, and full of flavor. You would never know they are whole wheat. Especially if you throw in some chocolate chips, or even raisins for a healthier choice.

Instead of syrup, you can add honey, or even Agave Nectar which is delicious and very healthy. These pancakes have a little cinnamon in the batter which also give them that extra kick.

My Sunday breakfast consisted of 1/2 cup fresh squeezed orange juice, 2 of these pancakes, and 1 tablespoon of honey all for 292 calories!!

Skinny Pasta and Bean Soup

Soup with beans, pasta, veggies, and cheese? Yes please!

Give me a hearty bowl of soup any day of the year and I’ll be happy! There is something so soothing and comforting about eating a yummy soup. I am always on the hunt for a good recipe, and a friend recommended this soup. She is also a fellow food blogger and she has great recipes! Check out her blog here.

So I didn’t have all the ingredients that this soup required, so I did change the recipe a little. It turned out delicious, but unfortunately I only had a tiny bowl because Mr. Man gobbled up the whole pot in 1 day. Ya, he liked it. I was a little annoyed though, just a tad! You know when you look forward to going home and eating something, and you look in the fridge and it’s gone? Well, that’s what happened, and I was utterly disappointed to say the least! I ended up making a quick salad and didn’t share one single bite..Ha, that’s what he gets!

The soup itself is very low calorie, healthy, and full of flavor.

Creamed Spinach in Parmesan Cheese Bowls

Have you ever been to Ruth’s Chris Steak House and had their creamed spinach? It is absolutely amazing, and I had to make it for our Christmas dinner!

I didn’t want to serve it in a big bowl, I wanted everyone to have their own portion. I decided that the best way to do that would be to make these parmesan cheese bowls which were the perfect addition of flavor to this creamed spinach, and so easy to make.

Gigantes {Giant Lima Beans}

I had made a similar dish over the summer, but it was done with bacon and Cretan Graviera cheese..these are better!!

They take a really, really long time to make {3 hours}, but are definitely worth it! I am actually obsessed with this dish, and plan on making it again next week! The recipe itself is very easy, and so is the process but it’s just time consuming.

This a very healthy dish, and serves as either a side dish or a main course. Since my new years resolution is to lose 20 lbs {I can do it!}, I have been counting calories and generally watching what I eat, and how I cook my food. I used quite a lot of olive oil for this recipe, and I had about a cup for lunch which works out to be about 320 calories, not bad! I also had a salad with lettuce and tomatoes and the meal was very filling. The beans are sweet, tomatoey, and just delicious!

Oh my goodness!! Merry Christmas, and Happy New Year!!

It has been over a month since I last posted, and I have recipe after recipe lined up to share with you. This holiday season was intense! So many things to do, so many people to see, and so much food to cook..not to mention the baking that went on in my kitchen!
